Peggy's Beef Sandwiches

It is interesting how the Lord brings people together. For a many years, Rich and I threw a large New Year's Eve party. One year,  a friend called the day before and asked if she could bring another family.  "You are going to love the mom!" was her comment.  I did.  And that evening was not only the beginning of a new year, but a new friendship that has held blessings for both of us.

One spring, we gathered for a work project and Peggy made these amazing shredded roast beef sandwiches for everyone. To the right is a photo of our boys enjoying those sandwiches together. I've made the recipe many times since - it feeds an army and is simple to make.  Best of all, it is a crock pot meal so it can be ready when you get home from church with guests.  I'm not sure if this is how Peggy makes it, as she never wrote the recipe down for me, just told me about it.  But she gets the credit anyway! 

Peggy's Shredded Beef Sandwiches (serves 16)

4-5 lb Beef Chuck Roasts

2 dry Lipton Onion Soup Mix

1 bottle beer

8 oz jar of mild Banana Peppers

 Place roast and 1 Lipton Onion Soup Mix in crock pot.  Set crock pot to cook for 8 hours on low. (I do this around 10 p.m. on Saturday night.) No need to add additional water.  

After 8 hours (or on Sunday morning) Remove roast to plate and place all broth in a bowl.  Place bowl of broth in freezer to allow fat to come to surface.  Shred beef using two forks, removing large chucks of fat. Place shredded beef back in crock pot.  (Go take your shower and get ready for church.) 

Remove bowl of broth from freezer after fat has come to the surface and become  solid.  Remove and throw away fat.  Pour broth over beef in crock pot, add beer, peppers and 2nd Lipton Onion Soup Mix.  Cook on low for 4 hours.  Serve on buns. 

The beef is very moist - it might even look stew like due to the amount of liquid.  I use a slotted spoon to serve. 

I do not know how to reduce the quantity this recipe makes, as I have always made it for a crowd.  Perhaps use half a beer and drink the other half? I don't recommended that if you are preparing it on a Sunday morning!  cheeky

The beef does freeze well.  Freeze with the broth to maintain moisture.
